At Bouncy Bakes, every cake tells a story, and ours began with Allison’s childhood passion, sparked by helping her Grandmother in the kitchen. This love for baking, which later saw her delighting her family with fresh bread and flapjacks, truly transformed with the arrival of her daughters. When her eldest, Elsa, was diagnosed with Coeliac disease in 2001, Allison embraced the challenge, becoming a specialist in delicious gluten-free occasion cakes. Her creations, born from love and necessity, quickly gained popularity, leading to requests from friends for their own children’s celebrations.
The turning point that led to the birth of Bouncy Bakes came in 2010. For her second daughter Amelia’s third birthday, Allison crafted a spectacular “Ben and Holly’s Little Kingdom” cake that captivated parents and inspired her to turn her passion and unique gluten-free expertise into a business. This decision proved fortuitous, leading to an extraordinary opportunity in 2013 when she was asked to create a centenary cake, cut by none other than HRH Prince Charles. This pivotal event solidified her confidence and propelled Bouncy Bakes’ reputation for exquisite taste and stunning artistry.
Now settled in Mistley, Manningtree, after relocating from Stevenage, Hertfordshire, Allison is thrilled to bring her baking prowess to her new community. Building on the remarkable success of Bouncy Bakes, she is ready to serve Mistley, Manningtree, Clacton-on-Sea, Colchester, Frinton, Walton-on-the-Naze, and all the delightful villages along the North Essex and Suffolk Border.
